History and Winemaking
Malvasia Nera is one of Puglia’s oldest native grape varieties. The grapes come from 40/50-year-old vineyards, harvested manually. After fermentation in temperature-controlled stainless steel (22-24°C) for 8-10 days with pump-overs and délestage, the wine undergoes malolactic fermentation. It ages for **3 months in second and third passage French oak barriques**, making it ready to drink very young.
