NINI’ Bianco Salento IGP – Vinicola Palamà: The first wine dedicated to Maestro Ninì Palamà, created by his son Michele. It represents a new path, a new taste, and an innovative way to interpret Verdeca (Note: Although the grape is listed as Negroamaro below, the core concept is a new interpretation), thanks in part to partial aging in barrique.

History and Winemaking

**Ninì Bianco** is the first wine conceived and produced by Michele Palamà in honor of his father, Maestro Ninì Palamà. This wine encapsulates passion, family, and tradition, yet looks towards the future and innovation. It is obtained from **pure Negroamaro** (100%) grapes, grown using the espalier system with an average yield of approximately 110 quintals per hectare.

**This white wine is produced from the most common black-skinned grape variety in Salento**, which once again proves how versatile and endless Negroamaro can be in its interpretations. Unlike all our other white and rosé wines, the Ninì Bianco is harvested and crushed under hyperoxidation, an operation that eliminates the few anthocyanins extracted during pressing from the alcoholic fermentation, as the grapes are harvested before *véraison* (the onset of ripening) is complete.

Organoleptic Profile

Appearance: **Pale green**, clear, transparent, moderately intense, and quite consistent.

Nose: The nose offers a modest but vast range of aromas, primarily recalling an excellent fruity blend of **clementines**, **loquat**, quince **apple**, **white melon**, and **white peach**. Subsequently, pleasant and diverse aromas of **hawthorn**, **magnolia**, **lemongrass**, **rosemary**, **mint**, **sage**, and playful spice notes emerge.

Palate: **The palate is met with a juicy, evocative, elegant, soft, rounded sip**, cloaked in an engaging appeal and then endowed with excellent freshness. Palate development is focused on seductive and enchanting tones. **The aftertaste is priceless.**

Food Pairings

Ideal with: **Fish dishes** and **white meat** prepared simply, baked or pan-fried. Specific examples: sea bass in salt, baked sea bream, or a jack fish omelet with a drizzle of raw oil, or a raw shrimp tartare.
