Ninì Rosato Salento IGP Vinicola Palamà is the first wine, wanted and made by Michele Palamà, son of the master Ninì Palamà to whom this wine is dedicated and inspired. “In the name of the one who is the heart of Vinicola Palamà, I wanted to enclose all the passion of a dream that smacks of family and tradition, but look ahead”. Ninì is therefore a beautiful novelty, but with a soul that does not betray its past. Ninì rosato is a wine produced from negroamaro and primitivo grapes with a yield of about 100 quintals per hectare. It is a wine that distorts all the cornerstones of Salento’s rosé wines: alcoholic and malolactic fermentation, both with a wooden part, create a soft, fresh and spicy product, something really out of the box.

This rosé is a wine with a bright color of a pretty pink with rose petal reflections. Medium consistency with the formation of fairly thick and fat arches. The nose is intense, fine, fruity and floral, persistent and rich in aroma. Notes of small red fruits, fresh raspberries, bitter orange grenade, tamarind and hints of red roses. In the mouth it is dry, sapid, beautiful freshness, not loaded with alcohol and therefore of good elegance. slightly bitter aftertaste of citrus peel, but pleasant. Beautiful persistence, balanced.

It goes well with fillets of red mullet in a pan and fresh tomatoes, crushed and blanched or with a nice fried paranza.
