Story and Winemaking
The Ninì Rosato is the result of Michele Palamà’s desire to create an unconventional rosé, inspired by family tradition. By using the Susumaniello grape, known for its character, and employing partial fermentation and malolactic fermentation in wood, Palamà achieves an unexpected complexity. This unconventional process gives the rosé a soft, spicy structure and balanced freshness, clearly distinguishing it from classic Salento rosés.
Organoleptic Profile
Color: **Brilliant, fairly intense pink** with rose petal reflections.
Nose: **Intense, fine, fruity, and floral**. Notes of **fresh raspberries**, **bitter orange grenadine**, **tamarind**, and a scent of **red roses**.
Palate: **Dry, savory**, and beautifully **fresh**. **Soft** and elegant, with a slightly **bitter citrus peel** aftertaste that is very pleasant and persistent.
Food Pairings
Ideal with: Pan-fried **rock mullet fillets** with fresh tomatoes, or a good **fritto di paranza** (mixed fried seafood).
