Calafuria is the iconic rosé wine produced by the Tormaresca winery owned by the Antinori family, with only Negroamaro grapes from the vineyards cultivated in the Tenuta Maìme in San Pietro Vernotico (BR).Calafuria is the symbol of the Salento wine renaissance, having been the first rosé made in Salento to challenge the best known and most acclaimed Provençal rosés.Calafuria rosato is an incredible clear interpretation of negroamaro where freshness, elegance and an incredible fragrance make it perfect for every moment of the hot Italian summer days.

The grapes were harvested between 30 August and 17 September. The grapes, immediately after harvesting, were de-stemmed and softly pressed. The must obtained was transferred to stainless steel tanks at a temperature of 12°C in order to obtain a natural clarification; here the alcoholic fermentation took place, carried out at a temperature of 16 ° C, to preserve and enhance the aromatic component. Calafuria refined a short period in steel in contact with its own yeasts before bottling and subsequent release on the market.

The Negroamaro rosé from Salento Calafuria is characterized by a pink peony color, has an intense and delicate aroma, stand out the fragrant notes of peach and grapefruit and floral notes of violets. In the mouth it has a soft entry followed by a pleasant acidity followed by an excellent acidic balance with great flavor and a good aromatic persistence.
