It is produced with Negroamaro and Black Malvasia of Lecce grapes from vineyards owned by the company located in the Salice Salentino area (Lecce_Puglia/Italy). The grapes after a soft destemming are subjected to pellicular maceration (T 7-10 ° C) for a few hours, followed by the extraction of the flower must (about 35%) and the subsequent fermentation at a controlled temperature (18-20 ° C).
