History and Winemaking
“Sasseo” comes from vineyards with very low yield (about 40 q/ha). The clusters are harvested in the first week of September, partly slightly overripe on the vine. Fermentation occurs in steel tanks at 26°C. Aging consists of **12 months in large Slavonian oak barrels**, followed by an additional **6 months in the bottle**. The name reflects the mineral character of the soil.
