History and Winemaking
The “Sonetto” is a tribute to the tradition of Primitivo di Manduria. Grapes come from ancient bush vines, ensuring exceptional concentration. Manual harvesting takes place in the **second week of September**. Maceration and fermentation last about **6-7 days** at a controlled temperature. The wine is then aged for an exceptionally long period of **24 months in French oak barriques** before bottling without filtration.
