History and Winemaking

“SUSU” is a Susumaniello single-vineyard from one hectare of high-density vines. **Harvest is manual and late** (first week of October). Winemaking involves 15-20 days of maceration and fermentation in steel tanks. The crucial aging process is **4 months in 50 Hl French oak (Allier) conical vats**, followed by a rest in the bottle, which enhances the elegance of Susumaniello.
