History and Winemaking
“Tramari” is made from Primitivo grapes harvested early (first week of September) compared to grapes destined for red wines, to preserve freshness. Vinification uses the **saignée (bleeding) technique** (partial drawing off of the must after a short maceration of a few hours), followed by white fermentation at a controlled temperature. The wine is aged for a few months in **stainless steel**.
