Verdeca di Cantele is produced with a vinification that is carried out with grapes that are de-stemmed and, without being crushed, they are cooled to about 8 ° C. At this temperature they stop for a few hours to increase the extraction of primary aromas. The must thus obtained by soft pressing decants cold to allow a natural clarification. Alcoholic fermentation takes place in stainless steel tanks at 14 ° C. The refinement is carried out in a steel tank until it is bottled.
Verdeca Cantele is a wine that expresses the best drunk young but, thanks to a good acidity, it manages to keep its freshness up to two years. It has a straw yellow color with delicate greenish reflections. The nose is intense and persistent. Fruity with clear hints of quince. Floral with elderberry and peach blossom. Characteristic retro balsamic smell with rosemary and sage. On the palate it is intense with a clear sensation of freshness and a light aromatic note.
