History and Winemaking
CANDÒRA is produced from hand-harvested Chardonnay grapes selected on a sorting table to ensure their integrity. Maturation takes place **exclusively in temperature-controlled stainless steel**, a choice aimed at maintaining a fresh aromatic profile and a full, velvety, yet dry taste, typical of Salento Chardonnay.
