Salento Winemaking

Obtained from Negroamaro and Susumaniello grapes cultivated on calcareous-clay soils. After a soft destemming and crushing, fermentation takes place in stainless steel tanks at a controlled temperature. The wine is aged for 12 months in Allier oak tonneaux and in concrete tanks.
