“CENTO SU CENTO” Primitivo Salento IGP – Castel di Salve: A robust and powerful 100% Primitivo, with a high alcohol content (15% Vol.) and long aging in Allier wood. This wine stands out for its intense aromatic profile, spicy notes, and great persistence, typical of Castel di Salve’s red wines.
History and Winemaking
CENTO SU CENTO Primitivo is produced by the Castel di Salve winery, based in Depressa di Tricase, using Primitivo grapes grown on espalier in the Ugento area (Lecce). Harvesting is done manually in mid-September. The wine undergoes a long period of skin maceration (about 20 days), followed by malolactic fermentation and significant aging in wood and in the bottle.
