The Copertino DOC Rosso wine from the Cupertinum winery is an extraordinary wine produced from 100% Negroamaro grapes grown in the countryside of Copertino on clayey soils, of various compositions placed above the hard limestone or tufaceous stone, in the flat area. giante, from 30 to 60 meters above sea level. The grapes come from old Apulian sapling plants with a density of about 4000 plants per hectare with a yield of 90 quintals. per hectare.

The wine is produced starting from a manual harvest of the grapes carried out from the third week of September. Once brought to the cellar, the grapes are de-stemmed and crushed, and then continue their journey with a maceration with the skins for 7/8 days at 28 ° temperature, followed by a soft pressing and finally a 6-year aging in steel and vitrified cement and a small part is aged in barrique.

Copertino DOC Rosso is a deep ruby ​​red wine with garnet reflections, with a broad and rich aroma with hints of blackberry and plum. Elegant, warm taste, and with a long persistent and pleasantly bitter finish, characteristic of the Negroamaro grape.

Pairing: first and second courses based on red meats or game, aged cheeses.
