History and Winemaking

Copertino DOC Rosso is the symbol of Cantina Cupertinum. The Negroamaro grapes come from old bush vines. Manual harvesting takes place from the third week of September. After crushing and destemming, maceration on the skins lasts 7/8 days at $28^\circ\text{C}$. The wine is distinguished by the unusually long aging: **six years** in stainless steel and vitrified cement tanks, with only a small portion in barriques, maintaining the freshness and typicality of the grape.
