History and Winemaking
Cubardi is made from Primitivo grapes sourced from **bush vines over 60 years old**. The grapes, hand-harvested, are carefully selected on a sorting table. After fermentation in stainless steel at a controlled temperature, the wine matures for **6 months in French oak tonneaux** (second pass, to avoid excessive wood influence) and completes aging with **8 months in the bottle**, developing its strong and stubborn personality.
Organoleptic Profile
Nose: Intense notes of **ripe fruit** open up to pleasant scents of **tobacco**, with a soft finish of **chocolate and coffee**. Complex notes (raisins, blueberry and currant jam, licorice) (ref. past vintages).
Palate: **Velvety and enveloping**. It has a thick yet light texture, with **tannins** capable of expanding gently. Pleasant long finish and **stubborn persistence** that reveals its strong personality.
