Salento Winemaking

Obtained from **Primitivo** grapes harvested by hand in mid-September, this wine follows careful cellar processing. The must remains in contact with the skins for approximately **18 hours**, with a *saignée* (bleeding off) of **50%**, to achieve the characteristic color and the right aromatic intensity.

Aging: In stainless steel tanks for 4 months at a controlled temperature and in the bottle for 1 month before commercial release.
