ES Primitivo di Manduria DOP – Gianfranco Fino: Gianfranco Fino’s ES is an iconic, limited-production wine that represents the pinnacle of expression for Primitivo di Manduria. Produced in the Sava area, it is the result of meticulous work, including harvesting with a **slight drying of the grapes on the vine** and the skillful use of Salento’s characteristic red soil. The wine matures for about **9 months in French oak barriques (50% new)**. It features an **intense, concentrated ruby red color**, an **opulent and bursting bouquet** (raisins, wild berries, sweet spices, mint, tobacco), and a **full, voluminous, warm, and overflowing taste**, tempered by a pervasive **acidic drive** and **docile tannins** that caress the palate.

ES is a wine that seeks the maximum concentration and complexity of Primitivo. Despite the high alcohol content, the pervasive acidic drive provides great balance and unexpected freshness. It is a wine of great structure and aging potential, capable of evolving positively in the bottle for **10 years and beyond**, further developing its tertiary notes.

Organoleptic Profile

Color: **Concentrated, lively, brilliant ruby red**.

Nose: **Bursting and opulent**. Notes of **raisins, blueberries, blackcurrant, strawberry, black cherry, almond, and carob**. Hints of **violet, tobacco, and mint**, and spices (nutmeg, cinnamon, cloves, black pepper).

Palate: **Full, voluminous, warm, and overflowing**, balanced by an **acidic drive** (freshness). **Savory, mineral, harmonious, complex, structured, fleshy, imposing**. Docile and gentle tannins. **Long, amazing, and persistent finish.**

Food Pairings
