History and Winemaking
Fanoi, whose first vintage was 2015, is produced from old Apulian bush vines to ensure very low yield and extremely high quality. Manual harvesting takes place in the **first week of October**, when the Negroamaro grapes have reached maximum phenolic ripeness. Maceration lasts about **15 days** at a controlled temperature ($25^\circ\text{C}$). After racking, the wine ages for **12 months in French oak barriques** before being bottled.
