History and Winemaking
Fiano grapes are harvested in the first week of September and gently pressed. The must ferments in stainless steel tanks at 18°C for 7-10 days. A key element is the rest of **2-3 months on the fine lees** in steel, which adds complexity and structure, followed by bottle aging.
