LE POZZELLE Rosato Salice Salentino DOP – Candido: LE POZZELLE Rosato is an iconic Salento wine, made from **Negroamaro (95%)** and **Malvasia Nera (5%)** in the heart of the Salice Salentino DOP appellation. Its vinification uses the traditional **”saignée” (bleeding)** technique, which involves using only 40% of the juice after 20 hours of cold maceration. This ensures its **bright coral pink color** and **floral and fruity** aromatic profile. The taste is voluptuously harmonious, characterized by an **elegant bitter almond undertone** typical of Negroamaro.

It is a rosé with “good body” (*buona stoffa*), but like all excellent rosés, it is intended to be consumed **young** (within **1-2 years**) to fully enhance its aromaticity and freshness, although its structure allows it to evolve for a short period.
