MJERE Bianco IGP Salento is a white wine produced by Michele Calò e Figli in the Tuglie winery (Lecce_Puglia/Italy). Produced with Salento’s Verdeca and Chardonnay grapes cultivated with the traditional sapling system in the municipality of Crispiano (Taranto) on clay soil, on layers of tuff rock. Harvesting is done by hand. The harvest, carried out in early September, is appropriately anticipated. This gives the product a good overall acidity and therefore a remarkable hold over time. The grapes are softly pressed and only the flower must, about 30%, is destined for the final product. The temperature plays an important role as the grapes are put in press at a temperature of 14 ° -16 ° with a slight pause of time to extract more fragrances and aromas. Subsequently, the must obtained is fermented at a constant temperature of 18 ° for a period of about 7-8 days, then it is transferred to stainless steel tanks and left.
MJERE Bianco is characterized by a straw yellow color with golden reflections. The nose is fine, delicate with pleasant fruity notes (pineapple, rennet apple). On the palate the taste is sapid and fruity, pleasantly fresh, balanced, of good intensity. Serve at a temperature of about 12-14 ° C.
