ROSA DEL SUD red wine Primitivo IGP is a great interpretation in pink of the main grape of Manduria, the Primitivo. This rosé wine is a wine with a strong character of identity, enclosing all the strength and scents of Primitivo which explode with their power to the nose giving floral and fresh Mediterranean fruit scents. In the mouth, it knows how to keep itself more harmonious and balanced. Fresh slightly acidic and very sapid it gives pleasant sensations softened by a good presence of glycerin which goes to balance an important alcohol concentration. It offers enveloping and pleasant sensations in the mouth and knows how to be very pleasant served well cool in the summer. Give emotions and great sensations even in winter, accompanying a good dish of meat and vegetables typical of Salento.

The harvest is carried out in the third decade of August with manual harvest inboxes. After the necessary destemming of the bunches with partial breakage of the grapes, the mass of the must rests for 12 hours in steel containers to macerate for optimal extraction of the coral pink colour and aromatic polyphenols from the skins. From the must takes place the traditional recovery of the first flower (about 30% by volume) for static drainage and later the start of the alcoholic fermentation with selected yeasts. Fermentation takes place for about twenty days at a controlled temperature of 14 ° C. Pouring and maturation of new wine on thin lees, with periodic batonage, for about 4 months. Filtration, bottling and resting for a few months in the bottle before being released for consumption.
