Story and Winemaking
The ROSÉ DEL SUD is the “great rosé interpretation” of Primitivo di Manduria. Grapes are hand-harvested at the end of August to preserve freshness. Rosé vinification involves a very short skin maceration (12 hours, for the extraction of the coral pink color), followed by the use of only the free-run must. Low-temperature fermentation (14°C) preserves the floral and fresh fruit aromas. Maturation on fine lees with *batonnage* for 4 months provides a glyceric and enveloping mouthfeel, balancing the alcohol content and making it a rosé suitable for year-round drinking.
Organoleptic Profile
