75 VENDEMMIE Negroamaro IGP Salento – Vinicola Palamà: An important Negroamaro, created to celebrate the 75th harvest of the winery (founded in 1936). This wine combines the typical freshness and fruit of young Negroamaro with the complexity and structure resulting from aging in **first-passage barriques**, where it also completes its malolactic fermentation. Features a dark ruby color and intense aromas of red fruit in alcohol and Mediterranean scrub.

Story and Production

This wine was created to celebrate the seventy-fifth harvest of the historic Palamà winery (founded in 1936). Produced from bush vines over 40 years old, which ensure low yield and high quality, the 75 Vendemmie represents the synthesis between the young fruit of Negroamaro and its potential complexity. The process, which includes malolactic fermentation and the first phase of aging in first-passage barriques, gives it great structure and an intense and persistent olfactory and gustatory profile.

Organoleptic Profile

Color: **Dark, dense ruby red**, slightly opaque, with slightly garnet reflections.

Nose: **Intense, fine, and complex**. Hints of **red fruit in alcohol**, slight **smoked toasting**, **Mediterranean scrub**, **balsamic** notes, and **licorice**.

Palate: **Dry, soft**, with good **tannin** and alcoholic structure. Broad and persistent, it warms the palate and has a rather long aftertaste persistence with notes of **pomegranate jelly and cherry**.

Food Pairings

Ideal with: Polenta with cheese. Main courses of **white or red meats** with **long cooking times** (stews, succulent, sauced braised meats).
