75 Vendemmie is an important wine, produced by Vitivinicola Palamà from 100% Negroamaro grapes, cultivated with the Apulian sapling system, with plants more than 40 years old that produce about 60 quintals per hectare. It was first produced in 2011, when the historic Cutrofiano winery founded in 1936 celebrated its 75th harvest. This wine with its great structure combines the freshness and fruit of a young Negroamaro with the typical complexity of aging in barrique. Harvest and alcoholic fermentation at controlled temperature, alcoholic fermentation tail and malolactic fermentation carried out in barriques of first passage. immediately bottled, it rests in glass for at least 6 months.
The 75 Vintages has a dark ruby red color, dense, clear, not very transparent, with slightly garnet reflections and rich in consistent and dense arches. The nose is intense, fine, full-bodied and complex, with fruity hints of red fruit in alcohol, lightly smoked roasting and hints of Mediterranean scrub. There are also balsamic and liquorice notes. On tasting, the wine is dry, with good tannins and an alcoholic structure, soft and with the right freshness. Wide and persistent it warms the palate and has a rather long aftertaste with notes of pomegranate and cherry jelly.
It goes well with dishes like cornmeal polenta or mixed with cheeses, or red meats with long stewed or braised succulent and sauced dishes.
