75 Vendemmie Palamà Negroamaro IGT Salento, it is an important wine. It is produced from 100% Negroamaro grapes, grown with the Apulian sapling system, with plants over 40 years of age that produce about 60 quintals to the hectare. 75 Vendemmie was produced for the first time in 2011 when the historic cellar of Cutrofiano – founded in 1936 – celebrated the seventy-fifth harvest. This wine with a great structure combines freshness and fruit – characteristics of young Negroamaro – with the typical complexity of aging in barrique. Harvest and alcoholic fermentation at a controlled temperature. Alcoholic fermentation tail and malolactic fermentation are carried out in first passage barriques. Immediately bottled, it rests in glass for at least 6 months.

The 75 Vendemmie di Palamà has a deep ruby red color, dense, limpid, not very transparent, with slightly garnet reflections and rich, bows and dense arches. The nose is intense, fine, of good amplitude and complexity, with fruity hints of red fruit in alcohol, lightly smoked toasting, and hints of Mediterranean scrub. There are also balsamic and licorice notes. On the gustatory examination, it is a dry wine, with good tannins and alcoholic structure, soft and with the right freshness. Wide and persistent, it warms the palate and has a rather long aftertaste persistence with notes of pomegranate and cherry jelly.

75 Vendemmie 2017 was awarded the silver medal at the Mundus Vini Summer Tasting 2018.

It goes well with dishes such as yellow flour polenta or mixed with cheeses. Second courses of white meats or red meats with long cooking such as succulent stews or braised meats and sauces.
