History and Production
This Primitivo di Manduria is a tribute to the oldest winemaking methods in Salento, recalling the traditional “palmento” (wine press). The Primitivo grapes come from very old vines (40 years) trained using the bush vine system, which guarantees low yields (approx. 40 q.li/ha) and high concentration. Fermentation occurs in traditional vitrified concrete vats with long macerations. The use of concrete for aging also preserves the authenticity of the grape and enhances its more robust and complex characteristics, with the evident spicy note that gives the wine its name: “Chiodi di Garofano” (Cloves).
Organoleptic Profile
Color: **Intense ruby red** with purplish reflections.
Nose: **Fruity, ample, and complex**. Scents of **wild berries**, **plum**, and **dried figs**, refined by delicate hints of **sweet spices** (cloves) and **marzipan**.
Palate: **Robust** and of good complexity. It captivates with **good tannins** supported by significant **alcoholic concentration**. It expresses the most authentic characters of the grape variety.
