Description
“LA SIGNORA” Primitivo Salento IGP – Morella: A top-tier, pure Primitivo, elegant yet typical, obtained from the selection of the best grapes from ancient **Apulian bush vine (alberello)** vineyards with an average age of about 65 years. It stands out for its long maturation in barriques and bottle aging, resulting in a sculptural, powerful, and complex wine.
History and Winemaking
The Morella winery aims to enhance its “old vines” vineyards to obtain raw material of absolute concentration. **La Signora** is a new cru, expressing an elegant style while remaining representative of the typicality of Primitivo. The grapes come from a vineyard located between Manduria and the sea, on “red soil” with a draining limestone substrate. The **yield is very low** (about 35 quintals per hectare). The harvest is manual, using wooden crates, in the first ten days of September. Fermentation takes place in small **wooden vats** with manual punch-downs at a controlled temperature (around 28°C), followed by a very soft pressing using a traditional manual press.
Organoleptic Profile
Appearance: **Deep, impenetrable ruby red** color with very slight violet reflections.
Nose: Intense and typical, with **red fruits** like cherry (with no hint of over-ripening). **Balsamic** notes of wild mint and **clove**.
Palate: **Powerful** and equally typical. Very elegant spice notes. The alcohol is present and significant but not distracting. Hints of **chocolate** in the finish. A wine that is both **sculptural and captivating**.
Food Pairings
Ideal with: Flavorful **grilled meats**, **roasts**, **cured meats**, and **medium-to-long aged cheeses**.
